Our dough recipe is identical to the one we use for our baked waffles. This means that the waffle will store very well after baking and can still be enjoyed hot or cold up to two weeks after being cooked. Working with Waffle Dough

The waffle dough is sold frozen and will be delivered to you, needing to be stored at -18°C.

The dough must go through some intermediate steps before it can be baked:

  • Thawing: Depending on the ambient temperature, this can take between 4 and 6 hours.
  • Fermentation: The Liège waffle is a bakery product containing yeast. This yeast must work and ferment in the dough to ensure the final product is airy and flavorful. This step may take between 1 and 1.5 hours. This is what gives the product its volume.
  • When the dough reaches a softer and creamier texture, it is ready to be placed in your waffle iron.

 

It’s important to have the right equipment to make your life easier. You will need:

  • A fork to remove waffles from the iron
  • A rack to cool the hot waffles
